Biancolilla is one of the most ancient olive cultivars in Sicily, and its production outside this territory is very limited.
Our Biancolilla olive oil is produced within the area of Piana degli Albanesi, due to the positive climatic conditions that encourage its cultivation. cultivation. The very term “Biancolilla” stands for the transformation of the olive colors during their development: it starts as a white drupe, and ends in a purply red nuance.
Biancolilla olive oil is very prestigious and has become one of the most recognizable flavors within the typical Sicilian taste. Its color is iridescent and goes from green to straw yellow, with golden touches. On the palate, Biancolilla oil has a slightly fruity taste, enriched with spicy and aromatic notes with flavors of almonds, artichokes and tomatoes. It goes along very well with fish-based and vegetable dishes; it can also be used as a butter substitute in pastry.

The Biancolilla olive tree is one the oldest varieties among Italian olive groves. Its production is particularly appreciated for its abundance and rusticity. This variety is in fact quite resistant even on hilly, poorly sprayed areas; in fact, the territory of Sicily is particularly suitable since it is a plant that develops very deep roots and naturally reaches the water necessary for their development
The Biancolilla extra virgin olive oil produced in Sicily by the Officine Kaggiotto company is made by pressing only native olives, grown in the company’s olive groves.
The harvest is carried out in the period in which the color begins to change from green to purple: this is precisely the best time to collect the fruits, since you will obtain a superior quality EVO oil. After harvesting, the olives are taken to the oil mill, where they are cold pressed within the first 12 hours of harvesting.
The processing of olives inside the mill follows 3 main phases:
Biancolilla trees are outstanding just for their majesty. It is an imposing, robust plant, characterized by a wide development of branches and trunk, both in height and in width.
The flowering of Biancolilla is very scarce; on the contrary, the leaves stand out more, which have a dark green color and an elongated shape, they can even reach 10cm.
The olives produced by Biancolilla plants have an elliptical shape, whose pulp is not very consistent, in fact their weight is around four grams. Production occurs in alternate years and offers a rather low yield.
